Delivery run 01 · Tuesdays
Bellingham, every Tuesday morning.
The northern run, and the oldest one we have. It started in 2017 with three stops and a borrowed van, and it is still the route with the most bread on it.
Who buys flour up here
Three naturally-leavened bakeries take the bulk of it: two downtown within a few blocks of Railroad Avenue and one in Fairhaven that has been with us since the first year. The Fairhaven shop takes Edison whole for their pan loaves and sifted Edison for anything laminated, and they are the reason we started sifting at all.
The food co-op bags our two-pound retail under their own shelf tag, which means a fair amount of what leaves here on a Tuesday ends up in home kitchens rather than commercial ovens. Two cafes near the Western campus take five-pound bags for scones and a Friday cinnamon bun that sells out by ten.
The odd one out is a brewery on Roeder Avenue that takes triticale, and occasionally rye, for a seasonal mash bill. They want it cracked rather than milled, which we do at the end of a Monday so it goes straight onto Tuesday's truck.
How the run works
The truck leaves Dike Road at 6:15 and takes I-5 north. First back door is open by 7:00 and the last drop is usually done before 11:00. We come to the alley or the back door, never the front counter, and we take your empty pallets and the previous week's cloth sacks away with us if you leave them stacked.
Standing orders are confirmed by text on Monday afternoon, cutoff 2pm. Change the quantity any time before that. After 2pm your flour is already ground and tagged, and we will bring it whether you want it or not.
Minimum is a hundred pounds per stop. Mixed varieties are fine and do not affect the minimum, so two fifty-pound sacks of different wheat counts. If you are under that and you are prepared to collect, the loading door at the mill is open weekday mornings and it is a forty minute drive down Chuckanut.
Worth knowing
Between June and September we can add a Saturday drop for anyone with a stall at the market, but it has to be arranged the week before, and it is a collection from the truck rather than a delivery to a door.

Nell or Wes picks up between 7:30 and 3:30 on weekdays. If we are on the floor and the stones are loud, leave a message with the variety and the poundage and you will hear back the same day.
